Adding fermented food to your diet is an excellent idea, but they are certainly an acquired taste. This recipe is a great way to start!
Start with about 8 small organic potatoes, wash and chop into 1" pieces
Put them in a pot of water as you cut them so they don't turn brown.
Boil until the potatoes are easily penetrated by a fork
Drain the water
Add 1/4 cup coconut oil and 1/4 cup almond milk (more or less..) and mash
Add salt to taste
Stir in 1/4-1 cup of sauerkraut one forkful at a time. Different kraut will have different flavors and you may prefer a little more or less depending on your love of fermented foods... Taste and add a little more if you want.
Transfer to a serving bowl and sprinkle with fresh thyme.
Serves 6 (or 4 with seconds... we love potatoes in the Casimir/Klimansky household!)
